For those of you who may not know, I was born and raised in the South… and down there, we love potato (potatAH) salad. It’s a cult favorite and a staple at nearly every gathering. But there’s no one right way to make it—everyone has their own spin. Today’s version? It’s a little bit traditional, a little bit intuitive, and a whole lot of nourishing. Born from what was available in my kitchen, and alive in my heart.

This (not-so guilty) potato salad came together with what I had on hand—from my kitchen, my garden, and what I know to be true about whole ingredients that support the body. It’s creamy and comforting, almost a cross between mashed potatoes and a classic potato salad, but made with ingredients that support gut health, hormone balance, and a steady metabolism. Think: fiber-rich potatoes, Greek yogurt for probiotics and protein, and a generous drizzle of olive oil for healthy fats and hormone support.

This is a great dish to enjoy during your luteal phase—when your body craves more complex carbs, grounding foods, and nourishment to support progesterone production and keep blood sugar stable. It’s simple, satisfying, and deeply supportive. And the best part? Like most good things, it’s flexible. There are endless ways to make a potato salad—this just happens to be the one I made this afternoon.
