Hi!! Welcome! I’m Victoria Louise, and this is Chasing Carrots—a Substack rooted in the pursuit of nourishment. Born out of my deep curiosity, personal healing, and formal education, this space is where curiosity and science meet, and where a love for cooking becomes a way to connect, grow, and share.

I started this page as a way to share and create community. After completing my Master’s in Nutrition, I knew I wanted to create something that felt both informative and personal—a place to explore whole body nutrition using whole-nutrient-dense foods, new ideas, and the creative joy of cooking. I believe that food is one of our most powerful tools, not just for physical healing, but for emotional grounding, creativity, and community.

Like many, my relationship with food hasn’t always been peaceful. I grew up in a home that valued organic produce, but as I got older, I found myself pulled into the noise of fad diets, toxic wellness culture, and a way of eating and moving that left me feeling depleted—mentally, physically, and emotionally.

Somewhere in the chaos, a quiet voice within told me: look at what you’re feeding yourself. That whisper became a spark, and I began to read everything I could about the body—its hormones, rhythms, microbiome, and needs. I found both fascination and frustration in the research, and eventually realized that in order to truly understand, I needed to study nutrition at the graduate level. This sparked my continuation of my education and in 2024, I earned my Master’s in Nutrition—and while that brought clarity, it also made me even more passionate about sharing what I’d learned.

Because what is knowledge if it’s not shared?
